Abstract

In Chol ejidos tortillas made from cassava are called ts’ijn waj which means ts’ijn (cassava) and waj (corn tortilla). These tortillas are prepared by mixing dough’s corn with the fermented cassava during the month of May, time of slash and planting in Palenque Chiapas region.
